Muffins are always good and we enjoy them year round. Whether as a snack, a breakfast staple, lunchbox item, the list could go on and on, muffins are a staple. Following are some recipes that are diabetic friendly and are enjoyable during any season. They are, however, perfect for fall when their ingredients are in abundance. Apple Allspice Muffins are a great way to enjoy the abundance of apples at farmer's markets and in the grocery stores in the fall. Oatmeal and Pumpkin muffins are a healthy alternative anytime, but again, they are perfect to take advantage of the beautiful pumpkins in the fall. Whenever you have them, they are sure to become favorites.

APPLE-ALLSPICE MUFFINS

1/4 cup + 2 tbsp unsalted butter, divided

1/4 cup + 2 tbsp Splenda brown sugar blend, divided

1 egg

1 3/4 cups all-purpose flour, divided

2 tsp baking powder

1/2 tsp ground allspice

1/4 tsp salt

3/4 cup fat-free milk

1 cup peeled, finely chopped apple

Non-stick vegetable oil spray

1/2 tsp ground allspice

In a medium mixing bowl, cream 1/4 cup butter; gradually add 1/4 cup + 1 tsp of the Splenda brown sugar blend, beating at medium speed of electric mixer until mixture is light and fluffy. Add egg and mix well.

Combine 1 1/2 cups flour, baking powder, 1/2 tsp ground allspice, and salt. Add to the creamed mixture alternating with milk. Stir just until moistened. Gently stir in chopped apple. Spray 12 muffin cups with vegetable oil spray. Spoon batter into prepared muffin cups, filling each about two-thirds fulls.

Combine remaining Splenda blend, flour, and allspice in a small mixing bowl. Cut in the remaining two tablespoons of butter, using a pastry blender or two knives, until mixture resembles coarse meal. Sprinkle mixture evenly over the tops of the muffin batter. Bake at 400 degrees for 20 minutes or until lightly browned.

OATMEAL & PUMPKIN MUFFINS

Note: Eating 1 of these nutritional muffins will provide 1 of your 3 recommended daily servings of whole grains. Whole grains and fiber are important to the diabetics diet.

2 cups + 2 tbsp old-fashioned oats

3/4 cup whole-wheat flour

1/2 cup Equal Sugar-Lite

2 tsp pumpkin pie spice

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 tsp ground cloves

1 cup canned pumpkin

3/4 cup low-fat buttermilk

1/2 cup egg substitute

2 tbsp canola oil

Preheat oven to 375 degrees & lightly coat 12 muffin cups with non-stick cooking spray or paper muffin cups and set aside.

Place 2 cups of the oats in a food processor; cover and process until fine. Transfer to a large mixing bowl and stir in flour, Equal, pie spice, baking powder, baking soda, salt and cloves. Make a well in the center of the mixture and set aside.

Using a wire whisk, whisk together pumpkin, buttermilk, egg substitute and oil in a medium mixing bowl. Add mixture all at once into the well of the flour mixture. Stir just until moistened as you want the batter to be thick and lumpy. Spoon into the prepared muffin cups, filling each about 2/3s full. Sprinkle the remaining oats on the tops of muffin batter. Bake for 20 minutes or until a wooden pick inserted in the center comes out clean. Cool in muffin cups on a wire rack for 5 minutes before removing from cups.

All-spice is a quay ingredient and greatly used in cultural cooking and is native to the Caribbean Islands. When the fruit is dried out at this point the fruit looks like dried peppercorns. The whole fruits are said to have a longer shelf life than the dried powder type. This product produces a more aromatic flavor when freshly ground before use.

The all-spice leaves also has great cooking properties and is used where available in cooking they are similar in look to bay leaves. They are used to infuse food and disgared when serving.

Another us for the wood and leaves of this plant is to smoke meat and dry fish.

All-spice is not, as some people believe, a mixture of spices. Rather, it is the Dried fruit of the pimento plant. This fruit is picked and dried out in the sun, when ripe the fruit is green but when the fruit has undergone the drying processes they turn brown and have the resemblance of large peppercorns. The whole fruits in my opinion are a much better product as they have a much longer shelf life, than what its powdered form will give. It is much better to ground this spice just before using it as it will give a more freshly prepared flavor and the aromatic essence of the fruit is brought out.

The leaves of the all-spice plant are generally used in cooking by the natives in the Caribbean Island. They use leaves in cooking where possible as it has grown to be part of there culture. The pimento leave is very similar to bay leaves they have a common use amongst the natives of the Caribbean thus used to infuse the food with flavor then removed at the time of consumption. All- spice has another more common trait as the wood and leaves are used to smoke meat or fish and vegetables. All-spice being a local crop it is also found in essential oils.

Spice are also known for there natural medicinal properties. All- spice is commonly known as a seasoning, spice, or an extract usually derived from food. The content of nutrients and non-nutrient substances are minimal, and that is due to the fact that they are consumed in small amounts.

However spices give variety and flavor to the food also helping to stimulate the appetite encouraging the flow of the digestive juices. They are well known both in the Caribbean Island and in Europe for its soothing properties. It has been known to be the host of many colds and flu remedies around the world, medicinally all-spice is a digestive aid that promotes the digestive enzymes, and it is a natural anesthetic and helps with muscular pain and tooth ache. So that's why I think all spice is a culinary giant in the world of spices.

Maintaining proper pH balance is confusing, but adding calcium supplements and health drinks to your diet is a smart way of simplifying the issue. It is extremely challenging for even the most health conscious person to reach the recommended proportion of alkaline foods to acid forming foods each day. That recommended ratio is 80% alkaline to 20% acid. While most of us eat plenty of acid forming foods without even trying, it takes some conscious effort to consume more alkaline forming foods.

Take a good look at your own diet and you will see that proper pH balance is not easy to accomplish without some help. Understand that we are talking about the acidity or alkalinity of your blood when discussing pH balance. Things like:

  • Coffee, sodas, alcohol, chocolate, white and wheat flour, cheese, meats, rice and beans are common acid forming foods.
  • Alkaline foods are more likely to be fresh fruits and vegetables.

As we all know, most people don't stick to a diet of 80% alkaline foods, so let's take a look at how calcium supplements and health drinks can assist. First, it is imperative to understand that the best sources of calcium come from whole foods. Dandelion root and alfalfa are two excellent whole food ingredients rich in this valuable mineral. When calcium is attached to a source of this nature, the body is better able to absorb it and put it to use.

  • How does the body use calcium to regulate pH balance?

Think of it this way: The human body starts out in a slightly alkaline state, but over time becomes more and more acidic. When the intake of alkaline foods is not high enough to neutralize acidity, then the body must use whatever calcium is available to maintain pH balance. Usually, the next best source of something alkaline is the calcium in your bones. It only makes sense, then, that a calcium supplement will help you preserve bone strength while also maintaining the pH level of your blood for other issues.

If you also regularly consume health drinks with high alkalinity levels, you will be giving all that acid forming food, the one, two punch.

  • What kinds of health drinks are alkaline?

This is easy to remember. Since most fruits and vegetables are good for pH balance, it stands to reason that health drinks made from whole foods are naturally alkaline. However, it is key that the health drinks you choose do not include added sugar, artificial sweeteners, or high fructose corn syrup, as those are acid forming. What is most important is that the health drinks contain whole food ingredients such as real lemons, peaches, cinnamon, and/or herbal teas, as these are alkaline forming foods.

You will not find advanced health drinks in a convenience store, the local supermarket, or even your typical health food store. The best place to find higher quality alkaline forming foods and drinks is on the Internet. Search for all natural health drinks that are not sold in stores.

When shopping for calcium, remember to choose a natural whole food calcium supplement. Look for alfalfa and dandelion root in the ingredients. Also, check that Vitamin D2 is present as that provides the necessary component to work with calcium for improved bone strength and density. Vitamin D2 is crucial to aid the body in absorbing calcium.

By adding more alkaline forming foods and health drinks to your daily diet, you will find that your body responds. Many people have enjoyed fewer aches and pains, better sleep and numerous other health benefits simply by addressing the issue of calcium deficiency with a good calcium supplement. High blood pressure or hypertension is the condition when the blood flow in the arteries and veins is forced under a higher pressure than normal. This can happen due to the weakness of the heart or due to the buildup of cholesterol in the coronary arteries, which can reduce their lumen. Today, most people in the world are suffering from hypertension, though it is not always fatal. Proper medication and a positive lifestyle can make people with higher blood pressures lead a long and happy life. However, neglect can cause severe fatal problems like myocardial infarctions (heart attacks).

High blood pressure is known as Rakta Gata vata in Ayurveda. It can be caused due to vitiation of any of the three doshas, though the contribution of the vata dosha may be more, as it is responsible for the circulation of blood. The following are the main precipitating factors for people with different doshas:-

1. Vata type of Hypertension - This is caused by extreme emotions such as worry, anxiety and stress.

2. Pitta type of Hypertension - This is caused by negative emotions such as hatred, jealousy and feeling for revenge.

3. Kapha type of Hypertension - This is caused by problems with the digestive system.

(1) Useful Herbs in the Treatment of High Blood Pressure

1. Alfalfa (Medicago satina)

Alfalfa contains several elements which are needed in the softening of the hard arteries. This reduces the tension in the arteries and hence helps to treat hypertension.

2. Bloodwort (Achillea millefolium)

Bloodwort is a sweat-inducing herb. It makes the blood flow towards the skin for expelling the sweat. Due to this free movement of the blood, the high blood pressure is reduced. Bloodword contains an alkaloid which is effective in reducing high blood pressure.

3. Garlic (Allium sativum)

Garlic is an antispasmodic agent. Hence it reduces the pressure in the arteries caused due to the pumping action of the heart during blood circulation. Garlic creates a rhythm in the pumping of the heart, which eases the pulse. Other high blood pressure problems such as dizziness, shortness of breath and indigestion are also taken care of by garlic. Garlic is widely considered to be the best remedy for high blood pressure.

4. Jaundice Berry (Berberis vulgaris)

Jaundice berry is another very effective remedy in the treatment of high blood pressure. It eases the tension in the arteries by making them dilate. Thus the blood flow in them is facilitated.

5. Parsley (Petroselinum crispum)

Parsley is like a monitor of the blood vessels. It regulates the flow of blood in them and maintains easy circulation. It looks after the entire arterial system. Hence it is a very beneficial herb for people with high blood pressure.

6. Rauwolfia (Rauwolfia serpentina)

The effects of rauwolfia on the arteries and veins of the human system have been investigated in detail, and immensely positive results have been obtained. Rauwolfia has a treasure-trove of alkaloids for easing the arteries, synchronizing the blood flow in them, reducing palpitation and even removing the cholesterol buildup in the arteries. Hence, practitioners of all forms of medicine acknowledge the effects of rauwolfia. In Ayurveda especially, the root of the rauwolfia is prescribed for hypertension patients. The Ayurvedic name for rauwolfia is sarpagandha.

(2) Dietary Treatments for High Blood Pressure

A strict dietary regimen is important to seek early treatment from high blood pressure. The following points must be obeyed:-

1. Salt should be reduced or totally eliminated from the diet. Hot and spicy foods should also be avoided.

2. Instead of hydrogenated fats, polyunsaturated and monounsaturated fats must be used. These include oils of sesame, olive, flaxseed, mustard and groundnut. Ghee and butter made from cow's milk are beneficial. Buffalo milk should be avoided.

3. Indigestion should be taken care of by consuming a good amount of leafy vegetables containing fiber.

4. Bitter gourd and drumsticks are advantageous vegetables for people suffering from high blood pressure. Colocasia must be avoided, but yellow pumpkin helps in reducing blood pressure.

5. Among fruits, bananas, oranges, guavas and apples are good. All kinds of dry fruits and nuts are good.

6. Sweets and chocolates must be avoided.

7. Red meats must be avoided. But white meats, especially fish are beneficial in lowering blood pressure.

(3) Ayurvedic Concepts for High Blood Pressure

Sarpagandha is the drug of choice in high blood pressure. Not only is this drug used in Ayurvedic medicine, but it is also used in allopathic medicine in the treatment of high blood pressure. In addition, the following herbal preparations are prescribed depending on the doshic cause of high blood pressure:-

a. For Vataja High Blood Pressure, jatamansi and brahmi are prescribed.

b. For Pittaja High Blood Pressure, sarsarapilla and sandalwood are prescribed.

c. For Kaphaja High Blood Pressure, calamus, arjuna, shilajit, guggulu and berberis are prescribed.

(4) Home Remedies for High Blood Pressure

a. Have a spoonful of lemon juice mixed with honey every morning.

b. Oranges are very helpful in high blood pressure. Have a juice of two or three oranges every day.

c. Prepare a powdered mixture of cumin seeds, fennel seeds and sugar. Take one spoonful of this mixture in water every morning and evening.

When a client comes to me with mood balance problems, I almost always offer them a specially formulated traditional herbal tonic as part of my comprehensive approach to Mood and Energy Wellness.

My clients (and I personally) find these tonics to be a key asset in maintaining stable, balanced, centered, and harmonious moods throughout the day.

The exact formulation of herbal tinctures that I combine for each client varies and is proprietary.

Generally these are the herbs I choose from for their effects on depression, anxiety, insomnia, irritability, and nervousness.

St. John's Wort

Many studies attest to the ability of St. John's Wort to positively affect depression. St. John's Wort has at least 10 active ingredients that help in relieving depression. As proven as those active ingredients are, never forget that the whole herb is going to be more powerful than its extracted ingredients. St. John's Wort helps relieve depression by:

  • Acting like a Serotonin Reuptake inhibitor (SSRI) similar to SSRI anti-depressant medications.
  • Acting as a norepinephrine reuptake inhibitor keeping this neurotransmitter at optimal levels. Low norepinephrine levels results in fatigue and lack of energy. Optimal norepinephrine levels are important for cardiovascular functioning, thermal regulation, vascular functioning (blood vessels) and act in the central nervous system to improve mood and concentration.
  • Inhibits excessive cortisol secretion.
  • Lifts dopamine levels. Low levels of dopamine leave you without adequate motivation and prone to compulsions and additions.
  • Enhances the activity of the natural tranquilizer GABA in the brain.
A number of studies have demonstrated the efficacy of St. John's Wort in improving depression symptoms with approximately 80% of people using St. John's Wort finding relief.

Black Cohosh

Black Cohosh is an analgesic nervine relaxant and helps correct low estrogen states in depression. Black Cohosh is especially indicated for deep dark depression that seems to descend out of nowhere. It helps when the mind is chaotic and wild with little ability to focus that results in acute or chronic anxiety.

New research indicates that Black Cohosh helps mood imbalances through directly effecting neurotransmitters and not just as a phytoestrogen acting like estrogen. It appears that Black Cohosh works through the brain and hypothalamus. It does so by affecting the neurotransmitters serotonin and dopamine - which helps explain why it alleviates mood swings and irritability.

Siberian Ginseng

Siberian Ginseng is an adaptogen and helps the body reach a healthy homeostatic state and more easily manage and integrate the stress that can act as a trigger for depression. It raises mood and increases non- specific immunity, which makes it especially helpful when depression occurs in conjunction with chronic illness.

Siberian Ginseng acts as both a mild tranquilizer and neurostimulant and has both a calming and a stimulating effect useful in both manic or depressive phases and sedation and arousal depressive states. The stimulation achieved with Siberian Ginseng does not produce nervousness and over stimulation but rather a relaxed sense of well-being - calming and at the same time invigorating.

It can raise norepinephrine levels helping to induce movement and motivation for desired projects. Plus, it works as a nerve tonic to calm the agitation that can come with depression.

Siberian Ginseng is particularly supportive for stressed and overtaxed adrenals and because adrenal gland tissue is neuroendocrine tissue, Siberian Ginseng provides the adrenal support along with brain support. It stimulates the adrenals to help give more energy to the body and the cholinergic (calming) nervous system. Its effect on the adrenal glands is more tonic-like than stimulating and acts to normalize adrenal activity. The use of Siberian Ginseng switches adrenal function from a cortisol/catoblic focus to a DHEA/anabolic focus resulting in building and energizing and normalizing physiological functioning throughout the body.

Siberian Ginseng has a long respected ability to improve performance and withstand adverse conditions without experiencing adverse effects. It also increases mental alertness, improves concentration, and has been found to increase the transmission of nerve impulses in the brain.

Lavender

Lavender is a restorative for the nervous system and helps lift mood - especially when sadness and low mood linger on after improvements in life situations. Lavender clarifies and stimulates thought processes and eases and relaxes emotional tension. It stimulates the limbic system and causes relaxation in anxious, tense, or hysterical states. Very soothing to the nervous system.

Passion Flower

Passion Flower helps to achieve stability of mood. It also helps restore deep synchronized sleep patterns in those who are tired but are awakened by pain or mental or emotional disruption during the night. It is specific for depression with deep exhaustion and insomnia due to worry, overwork, or disability.

Passion Flower is excellent remedy for reducing and resolving rumination - the excessive and repetitive thinking so often accompanying depression and other mood disorders. Passion Flower is effective in managing generalized anxiety and nervous restlessness.

Lemon Balm

This is a gentle but powerful nervine, which affects the limbic-hippocampal area in the brain. By so doing, the plant helps to filter out excessive stimuli from the body and modulates internal and external nervous input protecting the brain from excessive stimulation, reducing symptoms of excitability, restlessness, headaches, and palpitations.

Lemon Balm is specific for nervous heart, nervous stomach, and for depression co-existing with difficulty going to sleep. As a carminative nervine, it strengthens the brain against restlessness, anxiety, and neuroses.

Lemon Balm is known as the "gladdening" herb and has mild anti-depressant qualities, being soothing, calming, and uplifting plus reducing restlessness and agitation.

Diet and Testosterone....

Vitamin A: essential for the normal function of the reproductive organs. Lots of fruits that increase testosterone in this category: apples, blueberries, cantaloupe, pineapple and citrus fruits, just to name a few. Other food sources of Vitamin A include fish (salmon, again), leafy greens (spinach) and brightly colored vegetables like tomatoes, red peppers and yellow squash.

Hope you like salmon, because other than being an excellent source of Vitamin A and zinc, as well as protein, fish oil is said to keep SHBG (sex hormone binding globulin) levels lower. When testosterone runs into SHBG in the blood stream, it becomes attached to it, and then can't interact with any of the body's cells.

The net effect of testosterone that is attached to SHBG is the same as a lack of testosterone since it is prevented from having any impact on the body. Salmon might be your number one testosterone food source followed closely by oysters which are naturally rich in zinc.

Diet and Testosterone

Avoid:

The following foods are not testosterone friendly food and drink sources: fried foods, sugar and caffeine over stimulate the adrenals, which produce some testosterone. Over stimulating the adrenals leads to "adrenal exhaustion", means they are not going to produce testosterone or anything else.

So a breakfast of hash browns, toast with jelly and coffee with cream and sugar would have pretty much everything in it that you want to AVOID if you are looking for testosterone food sources.

In conclusion, a healthy diet and testosterone production go hand in hand.

It is not possible to include here all of the good testosterone food sources or even all of the fruits that increase testosterone.

Consult a nutritionist or dietician for a personal plan that addresses your individual needs.

In the meantime, for breakfast tomorrow have an egg omelet (egg yolk contains cholesterol which testosterone is made from) with tomatoes and red peppers (sources of Vitamin A) and orange juice to drink. Follow that up with some alfalfa-sprout toast (alfalfa is said to be a sexual stimulant) and some fresh apples, pineapples or other fruits that increase testosterone and you are sure to have a good start to your day.

Are we relying too much on vitamin supplements rather than the real thing? Did you know that many of the nutrients we receive from the foods we eat come from raw fruits and vegetables? This is why it is very important to eat a variety of fruits and vegetables in our diet to ensure nutritional balance.

Mega Vitamins From Food and The Sun

* Grow your own sprouts /wheat grass - alfalfa sprouts are super foods. They are packed with life-giving nutrients. Alfalfa sprouts taste good in salads and sandwiches. Some sprouts such as the wheat berry sprout can be mixed with dried fruit, and because of their nutty flavor, make it a perfect nutritious, energy filled snack.

Tip: There is strong evidence to support that wheat grass juice (sprouts that have grown into grass) eaten daily while on a macrobiotic diet can prevent disease and heal certain cancers.

* Eat a dark leafy green salad once a day - whether you eat spinach greens, kale, swiss chard, collard greens, broccoli, and mustard greens it doesn't matter. What matters is the greens are raw or only lightly steamed. Never boil greens! Once you boil greens I would compare it to taking a vitamin supplement. Dark greens are best for health when eaten raw. They have vitamins A, C, and K, iron, calcium, and folate. They are also great sources of fiber.

* Juice fruits and vegetables - juicing fruits and vegetables is an excellent way to get mega amounts of antioxidants. Investing in a good juicer is well worth the money and I highly recommend anyone who is interested in taking care of his or her health to buy a juicer. If your budget is not ready to buy a brand new one then you can find a used juicer at thrift stores for around $5 bucks.

Tip: add a couple of cloves of garlic to the juicer and you will prevent sickness. (Garlic is a natural antibiotic)

* Eat a handful of nuts and seeds daily - raw almonds, coconuts, Brazil nuts, cashews, pecans, walnuts, sesame seeds, sunflower seeds, and pumpkin seeds are nutritionally packed with goodness. These nuts are very nutritious and have good fat (monosaturated) the body needs for lowering cholesterol.

Tip: Pairing nuts with dried fruits such as raisins, figs, prunes and dates, make a delicious energy based snack for anyone on the go. Vitamin supplements? Who needs those?

* Eat two or three pieces of whole, organic raw fruit a day - this isn't really as hard to do as you might think. Bring fruit with you to work. First thing in the morning eat a piece of fruit or a handful of grapes or other berry. At midday have another piece of fruit and right before bed.

Tip: Always eat fruit on an empty stomach. Pomegranates, berries, grapes, apricots and the seeds of these fruits are full of antioxidants and disease prevention properties. Juice the seeds right along with the skins.

Get plenty of sunshine on your skin - This is the best way, and in my opinion, the only way to receive Vitamin D into our system properly. Why are we so afraid of the sun? Because people have abused it, and now we're afraid of it. We absolutely NEED sunshine on our skin. Stop wearing sunscreen if you can voluntarily get out of the sun! Not getting enough sun is making people sick!

When you first go out into the sun for the season, don't sit or lay in it for three hours and burn. Work your skin up to getting used to the suns rays. Only bathe for 15 minutes for the first week. Then on the second week bathe for ½ hour. The third week bathe for a little bit longer.

Skin cancer is caused from abuse of the sun. Just like all illness and disease is caused from abuse of something. If we take too many vitamins we'll get sick from them. Everything that we do in life, even if it is good for us, should be done in moderation.

Tip: Being in the sun is how the body absorbs calcium in the body properly, so in actuality, it is two vitamins that we receive from getting adequate amounts of sun on our skin. Incorporate the above list into your lifestyle and have a healthy, energetic body!
